Bubbly at Green Street Smoked Meats (Chicago, IL): By all accounts, baby Salon. The nose and palate showed quite strangely, and there was a persistent dill note that was really hard to understand. Not oxidized or over the hill, this was surprisingly fresh -- it tasted like good old white Burgundy with bubbles -- just a hint of mushroom, no nuttiness, and very little of those old white wine flavours. I would have enjoyed this a lot more if I could get over that weird dill tone.

Opened a magnum for a birthday dinner and it was a fantastic experience. Intense yellow color, small and slowly moving bubbles, a full and very generous nose with red apples, honey, toast and vanilla. Long and very smooth taste. A rare pleasure to enjoy!

This drank like it was 10 years younger. Fresh and layered - honey, vanilla, citrus, toasted bread. Expressive nose, balanced complex palette, persistent finish. 8-18-8-8

Very good blancs de blancs. Still very young and fresh to my palate. Good fine bubbles. Even a mousse. Lught color and could keep for a long time yet. Ripe yet racy. Wish imhad a few more.

fleshy, full bodied, and full of deliciousness. Having had a bottle every 2 or so years since release I would say this wine is at its peak. rich, doughy, with good golden fruit notes. the acidity is there to keep your interest. the finish is long and seductive. if you like perfectly aged champagne drink this now!

Tasted blind at HM's birthday @ Nicolas. Fragrant, floral nose of white flowers, green apples, pears and lemon. Light fizz suggested some element of age. Meaty on the palate with a hint of lemon and apples. Well balanced and rounded. Would keep for another few years.

Fairly straightforward champagne, with flavors of apples and slightly green pears. Lacks the nut and biscuit flavors on the finish that mark many champagnes.
