Saturday, August 25, 2012 - Our first bottle of serious chamagne. A tad disapointing tough. Light yellow color, on the nose green apples and yeast/bisquits. Very fine bubbles, not to many and the mousse gave a very nice mouthfeel. Bone dry, acidic ala green apples and bread but where is the fruit? Opens up with air, maybe it shoulld have been decanted? Ill leave some in the bottle to see tomorrow what will happen - do one decant champagne?
