Drank a small pour at a tasting. This wine completely exceeded my expectation. It had the elegance, power and lift that matched 2006 Piper cuvee rare that was also at this tasting. This is a big step up from their regular NV brut which I also adore.
3.9g/l and Q3 2022 disgorgement. 68% 2016 base and 32% reserve wines which go back to 2014.
Just a great aperitif champagne. Lots of saline, I got a hint of buttered popcorn on the nose. Didn’t realize they did partial malo until I looked it up. Fun to drink, but gone in a hurry.

2016 base with reserve wines back to 2014, disgorged in the third quarter of last year at 3.9 g/L. Pale straw with a short mousse. Loads of apple to start, along with almond skins, lemon, vanilla and white pepper. Impressively fine bead. Orchard fruit, melon and pastry cream flavors. An excellent edition of this cuvée.

Retail $105. 100% Chardonnay from four Grand Cru vineyards of the Côte des Blancs : Avize, Chouilly, Cramant, Mesnil-sur-Oger. The last bottle of this wine I tried I had for over a decade. This one? I've had it for about five months. A bit golden in the glass with an incredible nose of lemon meringue, wet rock, and that classic yeasty, freshly baked croissant aspect that is rarely achieved to this level of perfection outside of the Champagne region. The palate is perhaps even more impressive with a perfect balance of fruit, tartness, sparkle, and that oh so seductive dose of brioche. This is one of the better widely available champagnes on the market.
My first BdB from Billecart-Salmon and what a lovely experience. Pale golden colour. Aroma of apples, pears, passion fruit, almonds, lemon peel. Palate is chalky and refined, nice creamy sensation of very fine mousse, crisp well integrated acidity, citrusy and white fruit flavours with floral nuances.

(Disgorged in July 2021, base year 2016, 100% Chardonnay, dosage 8 gr/L) Light yellow colour with a greenish hue and a nose showing chalk, minerals and lemon citrus zest in a very pleasant way. Nice and fresh on the palate showing a mix of green and yellow apples with a crisp acidity and with a tight mid hiding the butter notes and instead showing a austere lime citrus peel bitterness on the lengthy finish. Leaving a pleasant saltiness on the lips as well. This should really reward some extra cellaring to show some of the hidden flavours.. (Probably best with 3-9 years extra cellaring)

Good to cross paths with it again after a month or so in isolation ( as last time is pretty followed in the wake of Krug 170eme) and frankly felt a very pretty offering, mineral yes, bright but also more polished than we remember it and very welcoming and with a smooth palate feel. Very good 91 and maybe an arbitrage of price vs quality on the Billecart-Salmon offerings.

The poor thing followed in the wake of the Krug 170eme ( Papies 93) so was a though act to follow. A whole 9 years since we had this last ( Papies 91) and very much in line with the comments than albeit we have no data of base or disgorgement. Halloween in the Vice Versa Cave: Slightly steely on entry, with a cut that rushes straight to the finish. The effervescence doubles this effect, with the white and high-register fruit and rock notes racing along the palate with a snap of fleeting depth. A bracing sensation on the inside of the cheeks leaves a lingering sense of energy and tension. There is a yeasty note that appears eventually to provide some balance its otherwise taut disposition. On the final sips, this “relaxed” into a more lemon-flavored animal, but the pithiness was omnipresent.

Second bottle of this for wife’s 40th. Still very fresh and vibrant. Only got half of champagne flute. Medium bodied, citrus and apple driven BdB. Will keep final bottle for a couple of years to see if it can build some more texture and body. Will make sure next time it’s a small group, with good glassware. It’s at least high silver medal, in time it might get to gold.
Ps- of note, this is the more squat and premium little looking bottle with the broad shoulders, white label. There seems to be different bottles used for this cuvee and may reflect some indecision as to where the cuvee sits in their hierarchy. It’s not the one in the more NV looking bottle. I’ve included an image of the bottle with its gift box.

Identical to my end August note. Metallic green color, nose dominated by chalk and green apples, with a hint of earl grey tea reminiscent of the nose of the Dom Ruinart. Active bubbles, very precise and mineral on the palate and a fat finish. Great Blanc de blancs.

2008 base I believe, from magnum. Still pretty taut and nervy, was considerably better on day 2. Quite linear with citrus and white orchard fruits, with a dry and somewhat chalky finish. Good, but not worth the price IMO. Hold, in this format at least.

Purchased in 2008, so I was a little concerned that it might have faded. But no, it turned out to be quite lovely. Started out a little musty, which made me think it might have been a little corked. But after it blew off, the wine showed elegant honey, butter, custard, yellow apples, and candied citrus notes. Good acidity and, after being open for about an hour, a nice finish. Even Champagne needs air, and this wine was no exception.

Very distinctive style of Blanc de Blancs. Greenish metallic gold color, very active bubbles. On the nose dominant green apple and chalk, with some brioche, white peach and marzipan. On the palate a stony and mineral attack, then mixes with Buttery green and white fruits, and a decent lifting finish. Quite nice and original and lovely in my book.

Light yellow colour with a greenish hue and a wild stream of bubbles. Youthful on the elegant nose showing lime, minerals and hazelnuts in a lovely way. Elegant smoother citrus acidity on the palate with a delicious creamy mid before the balanced finish showing lime juice acidity combined with zesty bitterness. (Probably best with 2-8 years extra cellaring)

Wow. I am old. When I was looking for a bottle of bubbles to open while making paella, I stumbled across this wine which we received from my wife's cousins a few years ago. Well, after popping and tasting, I realized that we were gifted this wine nearly eleven years ago. Yikes. All good, however, since I prefer my Blanc de Blancs with some age. A solid ripe wheat color in the glass with a golden delicious apple (perhaps honey-dipped) a go-go on the nose. The palate is bight and decadent with a touch of sweetness on top of oodles of caramelized apple, tart lemon, and baked-in brioche. Yowza. But with some time in the glass it opens up with some hazelnuts and toasted notes as well. Very nice acidity on the creamy palate showing red apples at first and then opens up on the finish with yellow plums peel and a spiciness in pleasant way. This is a good showing cuvée, clean and fresh and easy going. (Probably best with 0-5 years extra cellaring)

Light gold color. Drank 2 glasses over 2 hours. Brought this to Colita to have with the kids. This was an awfully nice bottle of bubbles. Explosive bead with a very creamy mousse, green orchard fruit on the nose, some leafy greens, and a bit of citrus, chalk and dense mineral notes as well. The palate shows pear, citrus, apple peel, a really nice chalky based minerality, with a bit fuller body that is complimented by the creamy texture. There's also a hint of some more exotic fruit that gives this even more complexity. I really like how this all comes together. 92+pts.

The perfect Mothers Day champagne. Beautifully balanced & elegant. Gold color, nose of spring flowers, cooked green apples & pears. Full bodied but creamy, nimble taste - peach, pear, a little citrus, and a hint of butter- then an amazing soar in the aftertaste a couple seconds later where the flavors pop with a great smooth finish. We had it next to the Shromsberg b2b and it was my preference.
As advertised, it goes great with raw oysters and seafood and was an amazing choice for a mothers day brunch.
A private dinner (Restaurant Ryugin ***, Minato-ku, Tokyo, Japan): Exclusively from the five Grand Cru villages on the Côte des Blancs, dosage 6 gr/l. Fresh and mineral core, flowers and lemon curd, silky texture, lively but caressing mousse, nice hint of cream on the finish, very good length. Very elegant overall.

It's not fair to rate this wine since it was served too cold. :-( Through no fault of its own, this bottle seemed more closed-in than normal and didn't want to open up. I will say that the 2004 BdB, tasted at Billecart Salmon, was more expressive, but then again that was a vintage wine and it was served at the ideal temperature.
NB, this BdB is a blend of two different vintages. During the tour at Billecart Salmon, the guide mentioned that the NV BdB has proved quite popular and is sold out at the winery in 750ml formats. Apparently, demand has outstripped supply.

Flashing Alicante 4; 9/8/2017-9/10/2017 (Alicante - España): Served from an open bottle almost without bubbles which is not all bad. Much brioche this time in the nose with a nice saline note. Good mineral. In the mouth short but it follows what it really is on the nose: tasty and elegant. On the palate it keeps pushing but lacks a final breath.

Intense aromas of brioche, freshly baked ciabatta and general autolytic notes. Crisp acidity on entry supple mid-palate with plenty of intense flavours. There is a chalky, mineral bite that I enjoy with B-S. Lifted with a savoury undertow, the acid lingers throughout the palate. Very mineral, with ash and toasted cereal as well. Tasty in the mouth, filling holes with a delicious aftertaste. A defect? Too short for my taste. Accompanied 2 razors claps and two red shrimp from Denia too much iron and to the point respectively.
Bofetada floral en nariz. Con profundidad y buen gusto. Elegantemente especiado con notas a savia salvaje. Muy mineral, con cenizas y cereales tostados también. Presentation with Eric Calzolari, so I suggest the wine was a recent disgorgement. This is the level where this house is starting to be exciting. Cuveé from all 4 grand cru villages of Cote de Blanc. Very confident nose of archetypal Mesnil with salt, schist and flint. Palate is broad, very fresh, very young, chalky, grapefruit bitter and sweet background. Main wine 2012.

A drastic selection of the best Chardonnay parcels. All 5 grand crus in the Cote Blanc. Looking for the minerality the chalk of the chardonnay is the idea. 5 years on the lees, '09 base here, and same as the NV Brut reserve on the reserve. Some battoage for the first three months. Balansert utgang, hvor alt kommer mer på plass. Tar seg kraftig opp med luft, mer mineralitet kommer til, og den bitende grapefrukten faller mer og mer i bakgrunnen. Totalt sett en ganske god champagne uten den helt store wow-faktoren. Er nok ikke verdt prisen per i dag. Ville vært svært god som aperitif, og sannsynligvis helt nydelig til sjømat.

The NV Billecart-Salmon Blanc de Blancs is a blend of Chardonnay from five Grand Cru sites: Avize, Chouilly, Cramant, Mesnil-sur-Oger, and Oger. While not as expansive as their vintage Champagnes, the non-vintage Grand Cru is delicate and precise. This was purchased a couple of years ago, but I'm not sure what the disgorgement date was. Nice nose with a citrus and minerality, a hint of briocbe, and a bit of toast. Pretty fine bubbles, and nice mousse. Excellent acidity with more citrus on the palate and a nice lingering finish. Nice light straw color. I actually liked this less than the Gardet premier cru that preceded it...but that being said, it's the Rose of this house that we really love.

Billecart-Salmon Tasting Dinner at La Belle Vie (La Belle Vie, Mpls): This was my clear favorite of the first trio of N/V's. I liked the earthy character, the nose is effusive, toasted almonds, saline, pear, complex. The palate really pops, a touch of smoke, floral, elegant, exquisite minerality, pear, creamy texture, lots of verve, a very fine bead. This was just so light, bright , and focused. It didn't hurt at all that the pairing with a mussel tart with meyer lemon, chive, and brown butter sabayon was spectacular. 92+ to 93pts.

The wine is clear and bright with a pale lemon colour and presence of many small bubbles. The nose is clean and developing, showing medium intensity aromas of butter, butterscotch, rye bread, green apple and subtle hints of fresh peaches. The wine is off-dry in the mouth with a high acidity. It has a medium alcohol and a medium body with a creamy mousse. It has medium(+) intensity flavours of rye bread, butterscotch, butter, green apples and hints of apricots. The finish is medium+.
It is a very good quality wine. It has a very good flavour concentration and a very decent finish. It also has a nice balance between residual sugar, flavour intensity and acidity, however it could be more complex in the nose. Can drink now, but it has enough acidity and fruit concentration to develop some more complex tertiary aromas in the 2-3 years following the disgorgement.

Billecart-Salmon Champagne, Burgundies, Rhones, Bordeaux etc with Sebastien, Brandon and Maciej (Museum Hotel, Wellington): This is Sebastien's favourite, but, as a Blanc de Blancs, is not the most popular in the range. The NV we tried is from three vintages, with 2009 the base. Eight grams of sugar of dosage per litre. Very pale lemon colour with subdued bead. This bottle has been in my fridge for a few days, stoppered with a champagne stopper to keep the bubbles "in". I have been pulling out the bottle and been enjoying a few glasses a day. There is no disgorgement date on the bottle, but it has a beautiful light straw color, with aggressive mousse and oh-so-tiny bubbles that go on and on. The nose is developing, shyly showing notes of citrus, red apple, pear, and grapefruit, with gentle hints of toastiness in the background. The palate shows a full bodied wine, with a lively citrus-laden mouthfeel, not completely dry (but almost) due to low dosage, with med(+) intensity flavors of tangy lemon/lime, tangerine, green apple, and then chalky notes and a savory toast point quality that adds nice complexity. This wine is light on it's feet and quite nimble, with a lot of reserve horsepower that will become apparent with a little more time in the bottle. I think it is a fabulous BdB, and I will do what I can to get more of it. Drink barely right now, through 2022 or so.

This was another outstanding bottle of NV blanc de blancs. The style is definitely in the yeasty biscuit camp. This had a very nice bead and good color. The nose had very strong notes of yeast along with subtle lemon citrus. On the palate very strong biscuit and bread flavors along with notes of citrus and good chalky minerality. The acidity was excellent. 91+

Celebrating a friend's recent wedding. Color was good. The wine seemed quite rich on the nose and on the palate, with up front, nutty, toffee/apple flavors and a bit of chestnut on the finish. I didn't get the mineral element others have mentioned. Maybe this was an older bottle. All I know is that I've cellared this bottle for less than two years. Good bead.

This bottle was not as enjoyable as the previous one. I believe they were from a different batch but B-S does not list lot numbers, disgorgement dates or mis en cave dates. This bottle was a surprise. The flavors were much leaner and the acidity was screeching. It paired well with sashimi & shellfish. I thought the flavors were pure enough & good minerality was present, but the balance between acidity & flavors was skewed heavily towards acidity. It almost seemed like this was a brut nature but it wasn't. A few more grams of RS would have helped. There was quality fruit but it's leanness and balance put me off a little. I would be curious to try this versus a brut nature bottle.

At IWM tasting in San Diego. I will confess I dont know Champagne well, so my notes have less context.
Great minerality, crisp and fresh. Fruit was bright mid palate, rocks/stone come through. Would be an interesting wine to pair with early courses of salmon/shellfish or cold soups. Hard to say if it improves with time, would probably drink now

One of the best blanc de blancs I've had in a while - Chardonnay fruit here is top notch. Very seductive and incredibly sexy mouthfeel. The finish is so long and clean. A great bottle to ring in the new year.

Took this to a BYOB sushi place (Coast) and did not take detailed notes. It matched great with the sashimi and maki. I do not know the disgorgement date of the bottle. I liked this Champagne a lot. This flavors were rounder than some other BdB bruts I've had but that wasn't a bad thing. The grand cru fruit really showed nicely. There was excellent chalky minerality and the acidity was very good and well integrated.
Overall an outstanding bottle of NV brut BdB Champagne. 92 - 93

Our first bottle of serious chamagne. A tad disapointing tough. Light yellow color, on the nose green apples and yeast/bisquits. Very fine bubbles, not to many and the mousse gave a very nice mouthfeel. Bone dry, acidic ala green apples and bread but where is the fruit? Opens up with air, maybe it shoulld have been decanted? Ill leave some in the bottle to see tomorrow what will happen - do one decant champagne?

Francine's birthday toast. Pale lemon, abundant very small bubbles enamating from many point sources, crystal clear. Good nose of toast bread, yeast and a bit of yellow apple. Dry, medium acidity, medium(+) flavours of ripe peach, pine apple. Very, very well balanced fruit-acidity-body and mouthfeel. Long finish with surreal mousse lifting the medium body. Like last time, one of our favourites.

Definitely the best NV Billecart I've had, but on this night it was outshined by two very good '02 vintage champagnes (Guy Charlemagne Champagne Mesnillésime Blanc de Blancs and Drappier Champagne Grande Sendree). Straw yellow ever so delicate yet lively effervescence. It make you want to take a 'bite' of the champagne. Brioche, yeast-ferment tones on top of bright yellow fruit. Promising. The mousse dances on the palate leaving behind a delicate, beautiful structured well-balanced experience (pine apple, fine acidity) that never really touches the tongue. If Paris' Notre Dame stained windows could be drunk they would taste like this. Brilliant in all senses, liquid argent fille grain. Value/money = 9

While I enjoyed their Reserve Brut and especially their rose, this was the 1st time I was trying their BdB. I have to admit I was somewhat disapointed.This is not a bad champagne at all but this is a bold one, a big autolysis character and smokiness (hazelnut and almost caramel like). To me it lacked acidity and doesn't have the finesse and elegance I'm used with Billecart. Also, it seemed that there was a lot of oak both on the nose and palate. I don't know which 2 vintages went into that blend, maybe '03 was one and would explain. Definitely a food Champagne.

Purchased off the list at the Wood Tavern. My memory was that the last time we tried this, it tasted a little flat which was probably due to the storage conditions. Quintessential delighful example of entry-level B-S champagne. Very, very clean; no hint of yeast, oak or caramel. Yet far from being insipid, it's interesting in its suble aroma of alpine air and lemon peel. The palate confirms - light but not delicate, stylish, citrus juice that's all too easy to gulp down. The acidity is slightly predominant now and this should improve over the short term, say 2 - 5 years.

This is a remarkable NV from this champagne house I become more enamored of with each bottle I try. The bubbles are quite large which in my experience does not usually presage a good champagne. But in this case, no matter. The nose is shy; just a hint of seabreeze. But once in the mouth, the focus, purity and freshness are amazing. Delicate but not insipid. Very chardonnay. While of course not the masterpiece the '96 Grand Cru is, the quality for a NV is almost unprecedented in my experience and I prefer it to the '98 Cuvee Nicolas Francois at twice the price. It might even gain with another year or two but there's no reason to hold back now.

For a blanc de blanc, this champagne lacked overall the overall elegance, finesse, and crispness that I appreciate in a 100% chardonnay champagne. A mellow, round, mildly butter, pear palate that never really went anywhere. Still a nice wine, but probably not worth the price tag.

Drank at Grapeleaf cellars at final pressing of Ladd Cellars grapes. This was a pretty fine wine. The main problem was that the power went out as I was pouring the glasses so getting any notes was darn near impossible. It was pretty tasty though.

Very effervescent, a nose of brioche and minerality. Green apple is predominant on the palate initially. After about 30 minutes, the green apple notes diminish and are replaced by stone fruit flavors. Clean and crisp throughout. A nice champagne, but I expected more nuance and mineralogy for the price.
BTW, the info at the myorigins website of Billecart is very helpful and interesting.

Just a great aperitif champagne. Lots of saline, I got a hint of buttered popcorn on the nose. Didn’t realize they did partial malo until I looked it up. Fun to drink, but gone in a hurry.

Retail $105. 100% Chardonnay from four Grand Cru vineyards of the Côte des Blancs : Avize, Chouilly, Cramant, Mesnil-sur-Oger. The last bottle of this wine I tried I had for over a decade. This one? I've had it for about five months. A bit golden in the glass with an incredible nose of lemon meringue, wet rock, and that classic yeasty, freshly baked croissant aspect that is rarely achieved to this level of perfection outside of the Champagne region. The palate is perhaps even more impressive with a perfect balance of fruit, tartness, sparkle, and that oh so seductive dose of brioche. This is one of the better widely available champagnes on the market.

My first BdB from Billecart-Salmon and what a lovely experience. Pale golden colour. Aroma of apples, pears, passion fruit, almonds, lemon peel. Light yellow colour with a greenish hue and a nose showing chalk, minerals and lemon citrus zest in a very pleasant way. Nice and fresh on the palate showing a mix of green and yellow apples with a crisp acidity and with a tight mid hiding the butter notes and instead showing a austere lime citrus peel bitterness on the lengthy finish. Leaving a pleasant saltiness on the lips as well. This should really reward some extra cellaring to show some of the hidden flavours..
(Probably best with 3-9 years extra cellaring)

Second bottle of this for wife’s 40th. Still very fresh and vibrant. Only got half of champagne flute. Medium bodied, citrus and apple driven BdB. Will keep final bottle for a couple of years to see if it can build some more texture and body. Will make sure next time it’s a small group, with good glassware. It’s at least high silver medal, in time it might get to gold.
Ps- of note, this is the more squat and premium little looking bottle with the broad shoulders, white label. There seems to be different bottles used for this cuvee and may reflect some indecision as to where the cuvee sits in their hierarchy. It’s not the one in the more NV looking bottle. Identical to my end August note. Metallic green color, nose dominated by chalk and green apples, with a hint of earl grey tea reminiscent of the nose of the Dom Ruinart. Active bubbles, very precise and mineral on the palate and a fat finish. Great Blanc de blancs.

Purchased in 2008, so I was a little concerned that it might have faded. But no, it turned out to be quite lovely. Started out a little musty, which made me think it might have been a little corked. But after it blew off, the wine showed elegant honey, butter, custard, yellow apples, and candied citrus notes. Good acidity and, after being open for about an hour, a nice finish. Even Champagne needs air, and this wine was no exception.

Very distinctive style of Blanc de Blancs. Greenish metallic gold color, very active bubbles. On the nose dominant green apple and chalk, with some brioche, white peach and marzipan. On the palate a stony and mineral attack, then mixes with Buttery green and white fruits, and a decent lifting finish. Quite nice and original and lovely in my book.

Light gold colour with a lovely fine mousse of bubbles. This champagne is nicely balanced with nice crisp apples and citrus fruits balanced by honey and brioche. Fresh and lively but plenty of depth too.

Light yellow colour with a greenish hue and a wild stream of bubbles. Youthful on the elegant nose showing lime, minerals and hazelnuts in a lovely way. Elegant smoother citrus acidity on the palate with a delicious creamy mid before the balanced finish showing lime juice acidity combined with zesty bitterness.
(Probably best with 2-8 years extra cellaring)

Wow. I am old. When I was looking for a bottle of bubbles to open while making paella, I stumbled across this wine which we received from my wife's cousins a few years ago. Well, after popping and tasting, I realized that we were gifted this wine nearly eleven years ago. Yikes. All good, however, since I prefer my Blanc de Blancs with some age. A solid ripe wheat color in the glass with a golden delicious apple (perhaps honey-dipped) a go-go on the nose. The palate is bight and decadent with a touch of sweetness on top of oodles of caramelized apple, tart lemon, and baked-in brioche. Yowza. I have stated countless times that Blanc de Blancs is far from my preferred style of champagne. Unless it has some age, which this clearly does. Whoa. thedrunkencyclist.com

(Disgorged in 2019, 100% Chardonnay from Cramant, Avize, Chouilly, Le Mesnil sur Oger and Oger, dosage 8 gr/l)
A bit shy on the nose at first showing minerals and citrus flowers. But with some time in the glass it opens up with some hazelnuts and toasted notes as well. Very nice acidity on the creamy palate showing red apples at first and then opens up on the finish with yellow plums peel and a spiciness in pleasant way. This is a good showing cuvée, clean and fresh and easy going.
(Probably best with 0-5 years extra cellaring)

Explosive bead with a very creamy mousse, green orchard fruit on the nose, some leafy greens, and a bit of citrus, chalk and dense mineral notes as well. The palate shows pear, citrus, apple peel, a really nice chalky based minerality, with a bit fuller body that is complimented by the creamy texture. There's also a hint of some more exotic fruit that gives this even more complexity. I really like how this all comes together. 92+pts.

The perfect Mothers Day champagne. Beautifully balanced & elegant. Gold color, nose of spring flowers, cooked green apples & pears. Full bodied but creamy, nimble taste - peach, pear, a little citrus, and a hint of butter- then an amazing soar in the aftertaste a couple seconds later where the flavors pop with a great smooth finish. We had it next to the Shromsberg b2b and it was my preference.
As advertised, it goes great with raw oysters and seafood and was an amazing choice for a mothers day brunch.

Lots of bubbles lasting forever. On the third day when I released the bottle stopper it flew into the air and bubbles jumped out of the glass. No bitterness in this Champagne. Palate lemon, mineral, grilled bread. Great celebratory champagne.

It's not fair to rate this wine since it was served too cold. :-( Through no fault of its own, this bottle seemed more closed-in than normal and didn't want to open up. I will say that the 2004 BdB, tasted at Billecart Salmon, was more expressive, but then again that was a vintage wine and it was served at the ideal temperature.
NB, this BdB is a blend of two different vintages. During the tour at Billecart Salmon, the guide mentioned that the NV BdB has proved quite popular and is sold out at the winery in 750ml formats. Apparently, demand has outstripped supply.
Must retaste.

Intense aromas of brioche, freshly baked ciabatta and general autolytic notes.
Crisp acidity on entry supple mid-palate with plenty of intense flavours. There is a chalky, mineral bite that I enjoy with B-S. Lifted with a savoury undertow, the acid lingers throughout the palate. Depth and precision, yet with suppleness to the mid-palate, this is delicious and showing well.

Accompanied 2 razors claps and two red shrimp from Denia too much iron and to the point respectively.
Bofetada floral en nariz. Con profundidad y buen gusto. Elegantemente especiado con notas a savia salvaje. Muy mineral, con cenizas y cereales tostados también. Sabroso en boca, rellenando huecos con un retrogusto delicioso. ¿Un defecto? Demasiado corto para mi gusto.
Acompañó 2 navajas y dos gambas rojas de Denia demasiada plancha y en su punto respectivamente.

Presentation with Eric Calzolari, so I suggest the wine was a recent disgorgement. This is the level where this house is starting to be exciting. Cuveé from all 4 grand cru villages of Cote de Blanc. Very confident nose of archetypal Mesnil with salt, schist and flint. Palate is broad, very fresh, very young, chalky, grapefruit bitter and sweet background. Main wine 2012.

Nice mousse and bright, straw gold color. The smells are granny smith apple, almonds, ginger, and chalky stone. The tastes are ginger, pear, apple, white pepper, chalk, and hints of dill. This wine has bracing acidity and a very tatsy finish.

Åpnet med litt vel kraftig men kremete mousse, og ganske tydelig grapefruktsyre. Litt gjærbakst på nesa, samt litt sitrus. Framstår som kun medium kompleks. Balansert utgang, hvor alt kommer mer på plass. Tar seg kraftig opp med luft, mer mineralitet kommer til, og den bitende grapefrukten faller mer og mer i bakgrunnen. Totalt sett en ganske god champagne uten den helt store wow-faktoren. Er nok ikke verdt prisen per i dag. Ville vært svært god som aperitif, og sannsynligvis helt nydelig til sjømat.

The NV Billecart-Salmon Blanc de Blancs is a blend of Chardonnay from five Grand Cru sites: Avize, Chouilly, Cramant, Mesnil-sur-Oger, and Oger. While not as expansive as their vintage Champagnes, the non-vintage Grand Cru is delicate and precise. Translucent goldenrod yellow in the glass with a fine, persistent bead and overtly pretty notes of golden delicious apple, fresh d'Anjou pear, and quince. Lovely Champagne. The mousse lifts the wine like a cloud on your tongue. Beautiful green apples and lemons blend with slate and chalk. A hint of toast points, but way off in the background. Elegantly focused, could use more time. Sadly, no DG date noted on the bottle.

I liked the earthy character, the nose is effusive, toasted almonds, saline, pear, complex. Billecart-Salmon Champagne, Burgundies, Rhones, Bordeaux etc with Sebastien, Brandon and Maciej (Museum Hotel, Wellington): This is Sebastien's favourite, but, as a Blanc de Blancs, is not the most popular in the range. The NV we tried is from three vintages, with 2009 the base. Eight grams of sugar of dosage per litre. Very pale lemon colour with subdued bead. Bouquet pure with green apple, some stone fruit and cherries. Some wet stone and minerality, with light autolysis notes. On palate, quite ripe but with racy acids. Well balanced with good weight and structure. Pure, clean flavours: citric, malic, pear and a subtle leesy, autolysis element. Rich and open with some evolution suggested. Quite long, finished nutty, dry and crisp. Would be great with seafood and could be cellared. 91.

This bottle has been in my fridge for a few days, stoppered with a champagne stopper to keep the bubbles "in". I have been pulling out the bottle and been enjoying a few glasses a day. There is no disgorgement date on the bottle, but it has a beautiful light straw color, with aggressive mousse and oh-so-tiny bubbles that go on and on.
The nose is developing, shyly showing notes of citrus, red apple, pear, and grapefruit, with gentle hints of toastiness in the background.
The palate shows a full bodied wine, with a lively citrus-laden mouthfeel, not completely dry (but almost) due to low dosage, with med(+) intensity flavors of tangy lemon/lime, tangerine, green apple, and then chalky notes and a savory toast point quality that adds nice complexity.
This wine is light on it's feet and quite nimble, with a lot of reserve horsepower that will become apparent with a little more time in the bottle.
I think it is a fabulous BdB, and I will do what I can to get more of it. Drink barely right now, through 2022 or so.

This was another outstanding bottle of NV blanc de blancs. The style is definitely in the yeasty biscuit camp.
This had a very nice bead and good color.
The nose had very strong notes of yeast along with subtle lemon citrus.
On the palate very strong biscuit and bread flavors along with notes of citrus and good chalky minerality. The acidity was excellent. 91+

Celebrating a friend's recent wedding. Color was good. The wine seemed quite rich on the nose and on the palate, with up front, nutty, toffee/apple flavors and a bit of chestnut on the finish. I didn't get the mineral element others have mentioned. Maybe this was an older bottle. All I know is that I've cellared this bottle for less than two years. Good bead.

This bottle was not as enjoyable as the previous one. I believe they were from a different batch but B-S does not list lot numbers, disgorgement dates or mis en cave dates.
This bottle was a surprise. The flavors were much leaner and the acidity was screeching. It paired well with sashimi & shellfish. I thought the flavors were pure enough & good minerality was present, but the balance between acidity & flavors was skewed heavily towards acidity. It almost seemed like this was a brut nature but it wasn't. A few more grams of RS would have helped. There was quality fruit but it's leanness and balance put me off a little. I would be curious to try this versus a brut nature bottle.

At IWM tasting in San Diego. I will confess I dont know Champagne well, so my notes have less context.
Great minerality, crisp and fresh. Fruit was bright mid palate, rocks/stone come through. Would be an interesting wine to pair with early courses of salmon/shellfish or cold soups. Hard to say if it improves with time, would probably drink now

One of the best blanc de blancs I've had in a while - Chardonnay fruit here is top notch. Very seductive and incredibly sexy mouthfeel. The finish is so long and clean. A great bottle to ring in the new year.

Took this to a BYOB sushi place (Coast) and did not take detailed notes. It matched great with the sashimi and maki.
I do not know the disgorgement date of the bottle.
I liked this Champagne a lot. This flavors were rounder than some other BdB bruts I've had but that wasn't a bad thing. The grand cru fruit really showed nicely. There was excellent chalky minerality and the acidity was very good and well integrated.
Overall an outstanding bottle of NV brut BdB Champagne. 92 - 93

Our first bottle of serious chamagne. A tad disapointing tough. Light yellow color, on the nose green apples and yeast/bisquits. Very fine bubbles, not to many and the mousse gave a very nice mouthfeel. Bone dry, acidic ala green apples and bread but where is the fruit? Opens up with air, maybe it shoulld have been decanted? Ill leave some in the bottle to see tomorrow what will happen - do one decant champagne?

Straw yellow ever so delicate yet lively effervescence. It make you want to take a 'bite' of the champagne. Brioche, yeast-ferment tones on top of bright yellow fruit. Promising. The mousse dances on the palate leaving behind a delicate, beautiful structured well-balanced experience (pine apple, fine acidity) that never really touches the tongue. If Paris' Notre Dame stained windows could be drunk they would taste like this. Brilliant in all senses, liquid argent fille grain.

While I enjoyed their Reserve Brut and especially their rose, this was the 1st time I was trying their BdB. I have to admit I was somewhat disapointed.This is not a bad champagne at all but this is a bold one, a big autolysis character and smokiness (hazelnut and almost caramel like).
To me it lacked acidity and doesn't have the finesse and elegance I'm used with Billecart. Also, it seemed that there was a lot of oak both on the nose and palate.
I don't know which 2 vintages went into that blend, maybe '03 was one and would explain.
Definitely a food Champagne.

Quintessential delighful example of entry-level B-S champagne. Very, very clean; no hint of yeast, oak or caramel. Yet far from being insipid, it's interesting in its suble aroma of alpine air and lemon peel. The palate confirms - light but not delicate, stylish, citrus juice that's all too easy to gulp down. This is a remarkable NV from this champagne house I become more enamored of with each bottle I try. The bubbles are quite large which in my experience does not usually presage a good champagne. But in this case, no matter. The nose is shy; just a hint of seabreeze. But once in the mouth, the focus, purity and freshness are amazing. Delicate but not insipid. Very chardonnay. While of course not the masterpiece the '96 Grand Cru is, the quality for a NV is almost unprecedented in my experience and I prefer it to the '98 Cuvee Nicolas Francois at twice the price. It might even gain with another year or two but there's no reason to hold back now.

For a blanc de blanc, this champagne lacked overall the overall elegance, finesse, and crispness that I appreciate in a 100% chardonnay champagne. A mellow, round, mildly butter, pear palate that never really went anywhere. Still a nice wine, but probably not worth the price tag.

Drank at Grapeleaf cellars at final pressing of Ladd Cellars grapes. This was a pretty fine wine. The main problem was that the power went out as I was pouring the glasses so getting any notes was darn near impossible. It was pretty tasty though.
