Sunday, March 14, 2010 - Exceptional. Drank on the patio in Cabo Pulmo on our 1st anniversary. Rich, golden, and round but a laser beam of minerality and acidity that balances perfectly. Mushroom and Brioche on the nose with fresh cut herbs. Granny smith green apple on the attack. Transition to crisp, clean, stoney minerality on the mid-palatte, and finished with more green apple and some caramel. This is big and round, but still very clean with tremendous balance. It seems to be gaining in size as we drink it. I will purchase more and hold. This is how Champagne should taste.
