Monday, March 26, 2012 - This Gaston Chiquet Special Club was certainly drinking a little bit better than my last bottle and seemed to have more complexity and depth. Overall, this is a very nice champagne that seemd to be open and fully mature (not the case with the last bottle). The palate revealed a silky texture and flavors of ripe citrus, poached pears, green apples, honey, biscuits and a touch of caramel. While the acidity is there, this fells like it has lower acidity than many of the champagnes that I have consumed recently. Maybe the lower acidity is due to the 2000 vintage? If purchased at the right price (below $50), this champagne will not dissapoint and is an easy buy.
