Wednesday, December 31, 2014 - Quite nice tonight after a couple of hours of air. This has matured quite abit in the year since I last tasted it. Deep amber in color, it has the requisite Chablis oyster shell minerality and acidity, but the fruit has more tropical notes than I was expecting and some petrol notes that seemed abit out of place. While I find this to be very enjoyable, I also find it to be abit atypical for GC Chablis and based on how much this has evolved in the last year, I think I'll drink my last bottle sooner rather than later.
