Wednesday, February 27, 2013 - Medium body, medium tannins, savory palate with medium acidity. The nose started opening up after 10 minutes, with garrigue and other fresh herbs. Not much on the palate initially; the tannins started to build up after 15 minutes, and then began retracting after an hour. After 40 minutes I could detect smoke and licorice on the backpalate. Also, subtle cedar (as in cedar plank roasted salmon) and old oak foudres. The acid began overpowering the fruit (both on the nose and on the palate) after an hour. After three hours this was done. 87-88
