Friday, July 4, 2008 - Most would call this over the hill, but I'm happy with it. Deep gold. Golden honey, Bengay, ash, rainwater nose. Rich lift in the mouth, a touch of coffee and caramel, and wonderful acids. Blind I would most definitely vote premier cru Chablis.
With a couple of superb Herve Mons cheeses (Gabietou and Tomette du Tarn).
With air some of the older toffied elements leaned out and the wine stood up a bit.
