  Had a back-up ready to go, but no need as this was nice. Golden yellow. A little white/melon fruit with some caramel and mineral on the nose. Light weight fruit and some butterscotch with zippy acidity and mineral on palate. Was great with seared petrale. Next night was all acidity/tart.

  With a couple of superb Herve Mons cheeses (Gabietou and Tomette du Tarn).
  
  With air some of the older toffied elements leaned out and the wine stood up a bit.
