Tuesday, February 1, 2022 - Another object lesson in older Nebbiolo needing air. Light browning garnet color. Upon first whiff, all prune and volatile acidity. Before dinner at the 5 hour mark, thin, acidic, and earthy (not in a good way). I was not feeling optimistic. Fortunately, though, by time the pasta course arrived (after about 8 hours of air at this point), the transformation had occurred. More body and sap, brown spice, tobacco, orange peel, and some sweet red fruit. After coming close to tossing this, it wound up being satisfying and very good if nowhere near great. No mistaking its traditional leaner, funkier, more mineral style with all of the joy and sorrow that that brings.
