Saturday, November 3, 2007 - Splash decanted one hour. Deep Ruby red in color with some transparency to the rim. The nose envelopes one with very comforting aromas of dark cherries, earth and toast. A very enjoyable, silky mouth feel giving tastes of cherries and dark fruit. Just a little tight and holding back from yielding something more complex. Presently lightly complex in taste and bigger on the nose than the palate. Overall, very nice and was a perfect pairing with a maple syrup glazed wild salmon. This is truly a Pinot for a meal. Very enjoyable.
