The melting together of herb, oak, earth and fruit to the nose. All that herb is asking for quite a few more years in the cellar. Plump palate, medium tannin, solid medium plus acid. Lots of rosehip to the nose. Wow. Palate shows a little incense-y.
This isn't so friendly with Delice de Bourgogne. The tannin to the wine, makes the cheese seem too sour, so something along those lines.
Day 4 and drinking with water weight. Still herb and spice. Almost straying into St. Joseph territory. Raspberry fruit. Grapefruit to the finish.
