Sunday, September 4, 2011 - Clear yellow gold. Popped and poured and enjoyed over 5-6 hours. The nose was a mix of dill and mint at open and eventually opened up to offer some apples and a touch of pineapple to mix with the herbal aromas. This really took off at about three hours after opening. It began on the mid palate quite tight and giving some bits of apple and pear, but the oak was a bit more prominent than I remember from the last bottle. With air, this took off and had that wonderfully balanced texture between creamy and lean. Nice acidity and some tropical fruit and a hint of anise showed up on the back of the palate. Great length.
