Friday, December 21, 2012 - I've been holding a few bottles and finally decided to open two of them. Reading some of the earlier reviews, I decided to open early and let them breath. I uncorked at 2:00pm, poured a couple ounces into my tasting glass, replaced the cork lightly and shook the bottle (yes, I shook it...a little trick I learned from a well-known winemaker). Uncorked again to let CO2 escape, then recorked and let sit in cellar for 3 hours. Decanted later...and wow, it was surprisingly good. Rich, mellow, long finish. Had the structure of much more expensive cabs. I'm going to try to buy more of the 2007 if I can find it. The obvious key: give it a few hours to breath and you will be rewarded.
