Wednesday, April 7, 2021 - Marvelous wine. Not quite fully dry. Quince and mineral. A mere trace of honey. Tremendous acidity, giving a powdery (?chalk dust) feeling in the mouth and is very refreshing. Over the years I've focused on Demi-sec and sweeter Huet, and wish I'd bought more Sec.

Drinking well but I'm sure it can outlive me. So I'm glad I had this bottle before it had the chance to do so.

Excellent match for glazed ham but would be for many things. It survived asparagus soup but was diminished by it.
