Sunday, October 10, 2021 - Lovely. Slightly wet wool nose at first, some fruit aromas but not strong. Main impression is in the mouth, slight sweetness that balances significant acidity. Lots of fruit. Almost crunchy, wonderful mouthfeel.

Paired with chicken leg, and butternut squash cooked baked with feta and onion. Brilliant match with the squash and feta in particular - acidity was a great counter to richness of olive oil and feta, but complemented sweetness of cooked squash.

Just as good on day 2, wet wool aroma gone.

No sense that this is tiring, seems very vital and masses of acidity to sustain it. Have a couple more in the cellar, interesting to see how these develop.
