Saturday, November 20, 2010 - The other notes are right: this NEEDS air, and maybe time. On day one, it was fairly simple and closed down: some nice pure lemony fruit with a strong acidic backbone, but without depth. Recorked and stuck in the fridge. On day two, this started off the same, but after an hour or so the lemon fruit started to fill out, and after two or three hours it was still growing, with the fruit aspect taking on a range of flavors, from citrusy lemon and orange to melony honeydew/cantaloupe, with some chalky minerality adding depth and complexity to the fruit. Finishes long and pure with cleansing acidity.
