Tuesday, May 24, 2011 - Pop and poured but had time to swirl and enjoy over a few hours. Tasted alonside a Huet 08 Le Mont. Great contrast of demi-secs. The Chidaine was softer and sweeter. Nice pears, vanilla, citrus, quince, sweet apples, and honeyed white tea. The Huet was more interesting on its own but the Chidaine caught up a bit with some cheese and ahi tuna salad. Full bodied with nice acidity. Hope to save a bottle for a few years to try again.
