Sunday, September 25, 2005 - We brought this to lunch at the Slanted Door...lovely chalky/minerally nose initially, with delicious bready/yeasty/biscuity flavors. After 30 minutes or so this had gained a marked richness along with flavors and aromas of brown sugar or caramel - not at all cloying, but very appealing. My first Billecart- Salmon, but definitely not my last- this was seriously great Champers.
