Saturday, December 31, 2005 - Very pale in color with a green tinge. This was sacrificed to see how long we want to hold the additional bottles. It had lime, pear and stone aromas with more citrus and a touch of pineapple as it warmed up. The finish was long and aromatic. I felt like it was maybe a bit closed as there was the sense of a much bigger wine lurking below the surface. It is probably not a long-term ager (10+ years) as the acidity is present but not overwhelming as you would find in a more typical Chablis vintage.
