  • Dim Sum Club at Ikyu (Ikyu, Tiong Bahru): Good raw material, but still a bit angular and not quite together in its youthfulness - not what I would have expected given the warmness of the vintage. The nose still had a layer of creamy oak draped over aromas of fleshy stone fruit, citrus and smoky, flinty minerality. The palate had a blast of citrus acidity sticking out like a sharp elbow amidst otherwise round, fleshy flavours of white fruit, melons and green mangoes. Ripe, but not quite as sweet as the nose suggested. On the finish, a great stream of flinty, shelly minerality and lemon juice really screaming the Chablisienne origins. This needs time, 10 years at least, but it should make a very good wine in time.
