Undrinkable. Almost vinegar. Just a really strange taste that does not seem to get better w time. I am really trying to find the beauty in this Chilean CAB but it's a serious stretch. Will close my eyes and try one more bottle.

Don Cayetano's 2011 cab offering doesn't reach California standards but, then again, it is Chilean. Wine was pleasant and enjoyable. A good value table wine. It is ruby in color with medium legs. Aromas of raspberry and cherry and tastes of red currants. Wine has a medium body and round texture. Finishes medium. Don't see much more improvement with age.

The wine looks Garnet colored. The legs are Medium. It smells like and Red Currant. It tastes like and Mineral. The body is Light/Medium. The wine has Smooth texture. The wine finishes Short.

- Garnet color with medium forming legs and aromas of blackberry and has flavours of blackberry and licorice anise with a medium finish - Not an overly powerful cab but a good representation from Chili. We served this with a raspberry chocolate bar for desert and the pairing was excellent.

Deep ruby, opaque appearance. The nose brings forward jam, preserves and berries. There is a grassy, almost soapy taste that is a little off. The finish is creamy, but gone. There isn't much left of this wine to remember.

- Brick color. It's somewhat balanced with a light/medium body with a long finish - Does not drink like a Cabernet Sauvignon, probably more like a Shiraz. After decanting for 20 minutes the wine was still sharper than I usually like, so I let it sit for an additional 30 minutes, after which it was magnificent.
I consumed with a spaghetti and (beef and pork) meatball dinner - it paired very well. Not very full bodied but exploding with flavor, extra spicy (just how I like it) - a nice surprise after reading some of the reviews.
Will definitely buy again - I believe this is a good value wine at $15 a bottle.

I am shocked by the number of one and two-star reviews (6 out of 25) for this perfectly adequate Chilean Cabernet Sauvignon and it occurs to me that maybe the reviewers are comparing it to the French variety, which will be superior in most cases to anything produced in Chile; however, I find Don Cayetano Cabernet Sauvignon Reserva Especial 2011 to be one of the best Cabernets from Chile and one that holds its own on the world stage, with the possible exception of France. It's been rightfully noted that it is a milder version of a Cabernet, almost like a Pinot Noir with obvious notes of fruit such as currant, plum and even black cherry with a less obvious hint of mint and only slightly spicy or peppery; however, I enjoy the smoother, milder flavor that conceals the high alcohol content (14%) with an understated nose and less acerbic mouth feel.
This is perfectly good Cabernet for everyday drinking and is not necessarily a great wine for a well-done steak, grilled lamb or venison, but could easily be drunk with any medium aged bold or not so bold cheese and fruit platter.
The fact that it’s a tiny bit lighter and sweeter than expected is a plus for me. I don’t care for by-the-book Cabernets and I am more than willing to try something a little more subtle and unusual. It’s not blended, but the “meticulously handpicked [grapes] from vineyards planted in mountain foothills at dizzying heights” gives this Chilean Cabernet a very distinctive and desirable quality that is well worth the $16.99 bottle price.
I enjoyed every single sip of this wine and that’s not something I can say about every Cabernet Sauvignon that I have tried. In my opinion, Chile is the new Australia or California of the wine world. The wine looks Light gold colored. The legs are Medium. It smells like Red Currant, Cherry, and Mint. It tastes like Blackberry, Red Currant, Cherry, Plum, Light toast, Oak, Clove, and Mint. The body is Light/Medium. The wine has Smooth texture. The wine finishes Medium.

Nose of cassis and plums. New world palate of blackberry and plums w a touch of spice finish. Not too complex but very fruity. Went really well w manchego. Don't expect a napa cab but who cares.
