Martin's Birthday Dinner aka Shiraz Night (Sixty 40, Rochester Mall, Singapore): A very interesting Champagne to start the night off with. The nose had a lot of character on it, with cherries and apple flesh aromas alongside some meaty notes and a toasty, nutty note. If anything, the palate was even more interesting. It was nicely fresh and well-integrated, with good acidity and fine mousse, but it was the flavour profile that was unusual, with more fleshy cherry inflections alongside some brioche flavours and a savoury, almost salty note of something cheesy beneath all of that - maybe Gruyere. I actually thought it tasted vaguely of a Croque Monsieur, especially towards the finish. It may not be to everyone's taste, but I must say that this was all well put-together though, and quite enjoyable on the night.
