  • Who knew?! A six year-old Paso cab franc with restraint, structure, texture, and balance? Heck a Paso wine worth the 25 bones -- start there! What a wine! Minerality! Verve! True, low expectations make for a more pleasurable drinking experience, but this is a flat out delish bottle of wine. Impeccably cellared since release, opened at the optimal moment, served with the right food -- on Mr. Parker's scale of eighty to a hundred, this was a six thousand. On the undrinkable/drinkable/tasty scale (my preferred system), this is a tasty. 'Nuff said. If you have one -- both of you out there -- serve at cellar temp. V. important. But if it's being well kept, no rush, either.
