Big beast of a wine with a lot of dark fruits and structure. Needs a major decant / more time asleep to balance out. Benefitted from a 2 hour splash decant but still was tight and tannic into the finish. I’d suggest trying in 2026. Hopefully the fruit holds up.

5 or 12 decanted @ 4:00 served @ 8:00 as with prior two bottles. Starts dark and broody, as the evening rolled on this showed more complexity picking up some dark cherry notes and spice. Should improve with another 5-10 years in the cellar

Vertical/Horizontal Tasting of Chevillon Nuits St. Georges Premier Crus (San Francisco): Deep, even ruby. Powerful blackberry fruit scents. Medium weight. Penetrating blue/black fruit and soil. A little orange peel appears later. Very tannic but not at all harsh. Young, classic Nuits that is easy to appreciate and admire now but should continue to unfold over the next 15 years and turn out to be fabulous. A wine to answer 2005 naysayers.
Even better 2 nights later.

4 of 12 opened @ 3:00 served @ 7:30. like the bottle last year, after 4 hours decanting time this was dark, deep and delicious. This has real punch and will continue to improve over the next decade. Had this bottle alongside the 2010 which was more open and giving showing lighter, brighter red fruits with nice balance and finish.

Aerated for an hour but threw it into decanter then for another hour due to tightness
Dark, deep core with holiday spice, minerals, and black fruit. Balanced and dynamic palate, with firm ripe acidity and nice punch. Good finish; nice today with some air but upside from here

Certainly early drinking window with a few hours of air this wine shows beautifully, rich layers of dark cherry fruit, spice, framed by fine tannins and acidity. Beautifully integrated and balanced with a persistent finish. Delicious now clear upside over the next decade
Cherry and earthy notes, with perhaps a bit of leather as well. Great, pure fruit. Still a decent amount of tannin here, and this should only improve with a few years of cellaring.

2005 Red Burgundy Tasting: PWTG Single Blind Tasting of six wines from the 2005 vintage in Red Burgundy. Decanted for 2 hours before tasting. Wine E My #3, Groups #3 Deep nose, showing earth infused cherry. Full palate, very clenched and firm, with a coarse texture but lots of dry extract. This was very similar wine making to Wine A, so I guessed both as Chevillon's which was correct. When will these 2005s soften?
medium red young color, spicy oak and stern dark fruits on the nose, intense leather, cherries, on the palate a very beautiful full punchy cherry fruit, raspberries, still primary and quite tannic as well, lovely spice emerging, great promise but patience essential.

PnP. First of 6 purchased on release. Cork wet about 1/4 of its length. Tasting notes from 1-3 hours post opening. Dark red for Pinot Noir. Nose of black fruits, iron, mineral spice - very NSG. Quite thick on the palate with dark fruit tones and deep fruit balanced by quite a lot of fine tannins which dominate the long finish. This is still a baby I think. I think this has the density of fruit and fruit/tannin balance to age and improve for another decade (or longer). Impressive.

Ranks among my favorite Chevillon wines, surpassed only by the 2002 Les Saint Georges! Gorgeous garnet color, nose of wood, dark fruits, sexy legs along the sides of the glass. Medium bodied on the palate, the spice and floor of wood provide beautiful structure. And the finish is lengthy. Paired with a roasted pork sandwich, soft VT goat cheese and spicy mustard. Tantalizingly well paired.

Decanted three hours. Baking spice and tart red fruit, and a little bit of graphite. A little hollow on the mid palate. Very nice. Great mid-weight wine, but not a fit for a rich or heavy dish.

#2 of 12 decanted at 3:00 for a 6:00 dinner. Dark ruby core, shy nose at the open. By dinner this was far more approachable, with a dark fruited nose with spice and earth notes. Richly detailed palate, balance, texture, finish. This NSG has it all....

Popped and poured. Deep lusty nose, black cherry, a metallic iron note and some Asian spice. The palate is deep, rich, loaded with dry extract and clenched. Better with food, has a serious structure. Finishes long but austere and clenched. Great material here if you have the patience to wait.

First bottle from a case bought on release, I knew it would be young but I couldn't wait any longer. As for a TN even though they are several years older it hard to improve on the descriptiontions offered by Sehill in 2009 and 2012

Opened and poured, this wine gave a more harmonious showing overall than a bottle tasted in 2009. The does remain youthful dense and brooding on the palate and bouquet. The wine gives a rather dense, muscular showing with its black fruits, spice and earth notes. Although more harmonious on this showing, this does seem little evolved otherwise since the experience with this wine. This will benefit from additional age and as previously noted this bottle provides a nice contrast to the 2005 Chevillon "Cailles".

In a Vaucrains vertical of 06, 05 and 03 at VVW. Beautiful balanced nose, berry and minerals. Closed up and tight, with incredible dry extract on the palate. Tart, spicey and LONG finish, with some drying tannins but lots of juiciness and flavor recurrence. Fantastic with lots of potential, but too young to drink a full bottle now as it would be wasted. . .but great to taste.

This wine is opened and poured. It can be best described as showing multiple personalities. Over the course of the evening the wine continues to evolve, devolve and change. Initially this wine was forward and perfumed on the bouquet, but backwards, tannic and tart on the palate. Airing caused the perfumed elements to retreat to the background and bring out brooding, dark aromatics while the palate became more approachable and even velvety in texture. The transformations of the wine were not linear however, at times both the aromatics and palate retreated to a more stern personality. All the components are here for the wine to age very well. This wine places an emphasis on structure and power compared to the '05 Chevillon "Cailles" that showed a more pretty and elegant personality. This is outstanding but a few more years of bottle age should benefit this wine and smooth out all of the elements currently going on.

France Trip Part 3 - Burgundy; 6/20/2006-6/23/2006: Barrel samples tasted at the domaine. #1 (Francois Freres): Raspberries, lots of structure. Dark fruit. Very promising. #2 (Seguin Moreau): Coffee/espresso, lots of structure and tannin. The final blend here should be amazing.

Barrel sample tasted at the domaine. Tasted same wine from two differnt barrels. Sample 1: Francois Freres barrel: more open, chocolate covered cherry; plush. Sample 2: Seguin Moreau: more espresso than the chocolate of the Francois Freres barrel. Darker flavors. Seems more structured. Looks very promising.

Robert Chevillon - Nuit-Saint-Georges "Les Vaucrains" Mini-Vertical (Vin Vino Wine, Palo Alto, CA): Tight nose to start, some dark cherry and fig peeking through, opened up with time in the glass. Nice bright tart cherry fruit on the palate, iron and rock, layered with depth. Slightly drying finish but not as tannic or closed as I expected. Very good and will improve.
