A different bottle today. More closed. Light gold colour. Honey and blue cheese on the nose. Still has fine oak and honey flavours. Hint of lemon and nutmeg. Rich, but with precise, balancing acidity. Really mellow and soft overall. No idea how long this will last, but no hint of oxidation. Really fine.

Matured yet vibrantly developed wine that had honeyed undertones and meaursault richness and even Chablis grand cru level minerality and schist. Wholesome fulfilling wine.

Dinner at Two Chefs - "Papal" Wines (Two Chefs Eating Place, Sin Ming Ave): This was a lovely, luscious Bordeaux Blanc that was drinking at just about peak. On first pour, there was a nice whiff of seashelly aromas from the glass that should have moved our minds to Bordeaux, but this quickly ceded way to almost Loire-like accents of white flowers, peach and lanolin, along with a very honeyed undertone. Really nice. With a bit of air, it developed even more, showing some chalky earth and a distinct waft of Buah Salak - the South-East Asian "snake-skin" palm-fruit. A really complex, interesting bouquet. I liked the palate too. It had a fresh juiciness that belied both its age and the warmth of the vinatge, with a lovely amount of acidity streaming underneath ripe, creamy flavours of white peach and apple, with a touch of ripe guava on the midpalate. The finish then echoed the nose nicely, with layer of honey and flowers and a lovely undertow of mineral. Drinking great now, this was really nice, and really youthful, showing all the honeyed ripeness that you expect from a 1989, but with a surprising amount of freshness to go alongside. Yum.

drinking very well. aromas of lemon, apple, chalk and lightly toasted oak give way to a round and smooth texture with honeyed notes (guessing due to the semillon). a very good white bordeaux that is mature and will probably still hold for a few years given the right condition.

From a magnum. A slow oxygenation success story. Level into neck and a healthy yellow gold colour. I opened it on Saturday evening and it smelt and tasted tired - some fruit, some oak but while not oxidised it had oxidative notes. I put the cork back in and left it 24 hours. Completely revived - a good nose of lemony fruit and oak and hints of black tea. Ripe lemons, minerals, and oak flavours, classic white graves and more like how I remember this wine from the mid-90s.

Mid-yellow colour, good for its age. Lots of oak on the nose, a bit too much perhaps but interesting scents of tea and white floral notes - quite delicate for its age. Good flavour, more oak here and ripe melon fruit. Fully mature and opens out well.

Drinks and Cards (London): Full yellow. Toasty aroma, nutmeg, touch of blackcurrant. Nutty flavour, honey, lots of spice. Lovely.

Bright gold colour. Lovely honey and oak aroma. Tastes of oak and honey too. Hint of herbs and faintly of blackcurrant. Dusty. Very complex.
