Gourmet Group: Rick Bayless (M/M thelostverse): Decanted off its sediment and served. Complex and immediately enticing, drawn in by aromas of cherry, currants, clove, cedar, lavender and violets. On the palate, cherry and white currant fruit complements clove and spice tones. Fully-integrated tannins leave a silky texture. Lengthy finish dominated by red berry fruit, with hints of spice and leather. This bottle showed beautifully tonight. At peak, may hold for another couple of years. Sadly, our only bottle, but lovely. Paired beautifully with the pork belly tacos. 93-94+ pts.
While I didn't have a recipe, it's a concept I am sure is very common and one I saw somewhere, I'm sure- pork belly braised in adobo sauce, then chopped and crisped up in lard, served with pickled red onion and queso fresco in corn tortillas.

Opened by Allred with a mushroom, goat cheese puffed pastry. Medium red. This is a single vineyard wine from the town of Gratallops. Mostly Carignan but also Grenache. Creamy red fruit with slate, graphite, mushroom and spice notes. Old world character. Holding up very well and showing nice secondary nuances. 93 points.

The best way to describe this wine is as a great cross between a burgundy and a barolo. Dark, medium bodied. Dirty nose (leather, poop and blackberries). Crisp acidity, soft tannins. Good, but slightly understated dark fruit. Rather meaty. Finish was medium. Very enjoyable and food friendly.
Price paid: $25 Would I buy again? Yes.
