In the mouth dry with good (high) acidity, medium alcohol, medium bodied with a refined mousse. Med+ intensity
Flavors of ginger, brioche, pastries, vanille a bit of butter but again honey, dried apple, cinnamon.
Long finish
Overall an outstanding wine! Will be buying more. Was a NV but had it in my cellar for 2.5 years and it did not show that age at all, stellar!

Last of my 1997 vintage bottles (not declared on the bottle), purchased in 2013. Still in great shape and wonderfully balanced. Masculine style, barrel fermented. Carbonation was still quite nice despite its age.

Although not vintage labeled, the bottled consumed was from the 1997 vintage. This was a bit overpowering when purchased in 2013 but cellaring has let it blossom into a masterpiece. One of the best Champagnes I've tasted. Masculine and bold, but balanced and nuanced as well. I hope the 2002 version is as good.

Lovely and dry, beautiful champagne with great complexity. The oak fermentation lends weight and body, definitely worth trying as the top-flight cuvee of a small producer.

Consistent with previous bottles. This is barrel fermented and leans towards the richer end of the spectrum and is very successful in that Bollinger, Tarrant, Krug style.

CIVC Champagne Tasting 2015: 70% Chardonnay, 30% Pinot Noir. Toast and pear aromas. Nice depth with the fruit and acidity quite bright while still having some full flavours. Misses a bit of length with a clipped finish, but still very good.

This has a deeper golden color and more of a baked fruit profile than most NV Champagnes I've come across. Compares favorably to the Tarrant Brut Cuvee Louis, albeit with a stronger seam of minerality. This tasted quite young and I think this will improve with some time in the bottle.

Oak was very evident at first but soon cleared up and left with lots of mineral notes, peaches and apricots. Palate was missing a bit of concentration at the same time very pleasant, with well integrated oak and fresh acidity. 91+

Again non-vintage, but deriving in this case from the 1998 harvest, this is a blend of 50% chardonnay, 25% pinot noir and 25% pinot meunier. It is made in old barrels, undergoing both alcoholic and malolactic fermentations in barrels. It’s very rich and creamy on the nose. Rather and full and round on the palate, it develops a nice spiciness on the finish, with some black fruit flavours. Good complexity. Very Good Indeed.
