Community Tasting Notes (1)

  • Firm, mostly iron and red fruit at first. Slowly uncoiled to expose more animal and floral notes, but is mostly shut down. There's something pretty sort of lurking beneath, but not ready yet (not that i was expecting this to be open for business). Wait for another 2-3 years until trying another. Served with pan-roasted magret with cider glaze, brussels sprouts with pancetta, buttermilk mashed potatoes.
