  • From a magnum. Opened 5 hours in advance. Slow ox'd.

    Violets, pepper, game meat and black truffles. The wine starts off tight and austere. An hour in the glass opens the wine and a sweet, rich and ripe raspberry candied fruit evolves. A note of iron replaces the pepper and meat. The wine is firmly tannic but superbly balanced by the hedonistic fruit which, in turn, is nicely offset by the umami truffle flavour.

  • Very lively, very archtypical mature syrah; needs air, but then comes around as a sort of mini-côte-rôtie with olives, bacon, game and garrigue. I am loving this wine, it really has a sense of place and while it is mature, it is by no means tired or declining. Optimum drinking right now, I would say, in my experience, these wines will keep but not get better after 10 og so years. (with P & J, Odden)
