Acidity is still quite firm and mouth-watering, despite its age. Finish is medium yielding a bit of floral honey on top of the rest. Wonderful example of a wonderful vintage that’s still showing well.

Pale gold, large bubbles, slight copper tiint. Lovely aromas of toast and brioche, pallet of toast, yeast and lots of Bramley apple flavours. Great balance and acidity.

Pale golden with a weak mousse-strong dough aromas-full nectar with strong acidity and very yeasty in flavor with defined lemon peel. The finish is short and bracing.

Very nice champagne. Light lemon color, with notes of citrus and toast in the aromas. Palate adds a streak of minerality to the mix, and more doughy notes get caught in the back end. Great appetizer wine.

NobleRottersSydney - Champers & Reds (Guillaume at Bennelong): {13%, cork} Something of a newcomer to the Australian market I believe – and at a price, too. Yellow-green in colour, with medium size bubbles visible. A soft nose with a little bread, but overlaid with strawberry / pinot characters. Pleasantly rich palate, creamy in texture, fine bubbles. Some development of pinot fruit – not especially young. Good balance. I enjoyed this, but at A$150 it’s very pricey.

Good cantaloupe, pineapple, apple cobbler, with warm dough, honey and yellow flowers. not too sweet. medium bubbles. mild finish. Better with rich appetizers than oysters. A bargain at $50.00

I had the regular 1995 Brut about 6 months ago and like this special cuvee slightly better. 25% Pinot Noir and 75% Chardonnay. Again a pale gold color. More refined with lively effervesence. A rich opulent style. Aromas of cream and bread dough. A full bodied sparkler with great balance. Notes of citrus and marzipan. Long finish. 94 points.
