Our 2007 Aubert Estate Lauren Chardonnay leads the way with an off the charts complexity in both aromatics and mouth feel! Early in 2008 while this cuvee was quietly aging, we noticed that the volume of aromatics was just so much more complex and highly pitched. Fermentation in barrel revealed a highly complex wine. This will be a fondly remembered vintage that follows on the heels of the great 2005. Along with past vintages, our Lauren 2007 has the same palate stain and inner mouth perfume that is the hallmark of this special vineyard. Lauren has four of the most distinct chardonnay clones and each are harvested and kept separate to the barrel and blended only before final racking to bottle. The Lauren Estate is on a small hill overlooking the tiny town of Forestville in the Sonoma Coast appellation and is named after our seven year old daughter, Lauren.
2007 Yielded a small crop of intensely flavored grapes. We take many steps to ensure that quality is always preserved so we harvested in the dark of night and moved the grapes in our refrigerated trucks to ensure the utmost attention in preserving the flavor nuances of the grapes. As with all of our Chardonnays, primary fermentation is conducted in barrel and took nearly 7 months to complete. This long and arduous process results in wines with outstanding freshness, lively aromatics and telltale nuances that are intriguing and retain site specificity. Aged in 100 percent new French oak barrels for 11 months, and then carefully racked to tank to await bottling.

The 2007 Lauren Chardonnay reminds us a lot of the 2005 with more amped up aromatics, greater mouth feel, and higher acidity, thusly equaling a more complex and collectable vintage. We immediately thought that 2007 has some of the same profiles of our favorite vintages—2005 and 2001 vintages. Initially, the pronounced “old clone” aromatics are typified with a floral note, more tree fruits and minerals and an organic sense of place. The bouquet is multi-faceted with hints of apple-baked goods and wet stones. The mouth feel presents a glycerin top note followed by an acid structure only found with these clones. The 2007 Lauren Chardonnay will age on a very slow path and by my assessment should drink well for 5-10 years.

“...eclipses its 2006 counterpart. It reveals a greenish hue to its straw color, in addition to extraordinary intensity, crisp acidity, stunning texture and length and abundant aromatics of quince, citrus blossoms, honeysuckle, poached pears and tropical fruits. It should drink well for 4-6 years or longer.
