Baumard's regular Savennières bottling comes from their 6-ha Clos Sainte Yves vyd between the Clos du Papillon & Roche aux Moines. The vineyard's soil profile is of shale, sand, & sandstone. Typically, yields are kept low (generally 1.5 -2.5 tons/ acre), and the grapes are hand-harvested & pressed as quickly as possible to preserve freshness & aroma. The grapes are whole bunch pressed & fermented in s/s tanks at low temperatures. The wine then spends 9 mos on the lees in tank before being bottled. 1,500 cases imported to U.S.
