Located on the right back of the river Serein, the same as for the Grand Crus, the Montée de Tonnerre is certainly the most prestigious and well-renowned of all the Chablis Premier Crus. The Domaine grows fruit on a total surface area of 4 hectares (9.8 acres), which were planted in 1974.
Terroir
Kimmeridgian. Right Bank, marl with oyster fossils, sticky soil, rich in limestone pebbles.
Grape
100% Chardonnay.
Average age of the vines
34 years.
Vinification
With no added yeast, long fermentation using natural yeast, in temperature-regulated tank. Spontaneous malolactic fermentation.
Maturing
On fine lees, only in stainless steel tanks, with as little manipulation as possible, during 12 months minimum. Long stabulation [sic] (long term storage) at moderated low temperatures. Fining if necessary using bentonite. One light filtration is performed before bottling.
Bottling
Bottled in the winery under airless conditions. Cork or screw cap (on request).
