2008 Quivet Cellars Spring Mountain District Cabernet Sauvignon - $65
Our mountaintop vineyard in Napa’s acclaimed Spring Mountain District took full
advantage of the even and moderate growing season in 2008. With the lack of
irrigation water due to the prolonged drought, this was just what the doctor
ordered to achieve the hang time needed to perfectly ripen our clone 7 old vine
Cabernet Sauvignon. Like its predecessors, the entry on this wine screams its
appellation, exploding in the glass with dark brooding fruits, minerality and dried
herbs. The palate is powerful and subtle simultaneously. Ripe, dark mountain fruit
across the spectrum are married with tannins that are large scaled but subdued
from minimal extraction in the fermentation process. Delicious now, this wine
should blossom to stunning in 4-8 years
