Bang bang big bottle of California Cabernet. Opened up at Peter Luger's NY and wished we could have left it to decant 2-3 hours but we were greedy and drank it bang bang. Huge on the nose you could smell the fruit and earth across the table. This wine has another ten years to mature lucky for me I have more bottles resting in the cellar. Between the steak and wine it was a love affair.

Well I have had a case since release and took this to a Brazilian resturaunt with friends. I didn't expect much so I was open minded prior to serving. I decanted and brought an aeration device (people around us thought I was crazy) using decent resturaunt glass. After twenty min in the decanter we went to work. Good glassy red color with slight edge brown. Strong aromas of raisins licorice and earth. Tasted a little cranky at first but opened up to a very well rounded CDP. Should last another 3-5 years. I give this a hurrah.

I have never had a bottle of Insignia I didn't enjoy and this 2000 was lip smacking good. Lots of fruit with aromas of cherry pie and dark chocolate. Decanted for 2 hours and second day was just as tasty.
