I've started drinking my Cabs with a Sommelier glass, I like to decant the bottle for an hour or so, then cover the opening of the decanter with plastic wrap and place it in the refrigerator for around 20 minutes. This seems to really help the wine open up.

2009 Hewitt Vineyard Cabernet Sauvignon

This wine is a rock star, decanted for over and hour, chilled for 20 minutes before serving and enjoyed it with a steak.
