Also, it was because, unlike many great Champagnes, I am told it is made differently every vintage. The Rare on Saturday was the only wine with significant bottle variation. The first bottle was unlike any Champagne I have ever had...beautifully evolved and exhibiting beautiful sweet melon notes and complexity that comes with aged, vintage Champagne. The second bottle was much more like what I might have expected...austere, tight, but also highly complex and standing by for greater maturity. The group attending would have found a 6 course meal being served with only one red wine a bit strange (myself included), but I can assure you, nobody ever so much as mentioned it.
