Definitely off dry, I had left it a couple of years from the last bottle and it is developing at a snail's pace suggesting that it has many years to go. My problem is that it did not work either time with the food (smoked fish this time). My fault, I guess, but I am not sure with what to try it next time nor how long I should wait until it gains a little more balance between the fruit and the acidity.

Pale in colour, thin in taste. It was more of a palate cleanser than a pleasure to drink and had nothing going for it. At £36.95 a bottle it does not hold a candle to most of its English competition. And, since I have just bought Bollinger NV for £41, there is a ton of much better champagnes for less money. Not recommended.

Decanted 90 mins before we ate and, at that stage, this was a solid and well made Napa Cab if a little one-dimensional. Two hours later, those that still had some on their glass discovered that it had lifted considerably and was now much softer and richer. It still has years ahead of it but, if serving now, decant much sooner than you think. This should score much higher in time. Almost no sediment.
