I was a little worried when I opened this one, since I don't really think of Cayuga White as a wine meant to age for three years. I was pleasantly surprised, however. The wine was very bright, quite acidic, and smelled and tasted strongly of lemons and slightly of limes. It turned out to be an excellent pairing with Lemon Dijon chicken breasts, and a pleasant after dinner wine.
