It is a mingling effect (Mingles , Seoul): By the glass as part of their signature pairing at Mingles , Seoul. Made by the grand master or at least the first master of yeast fermentation in south of the 38th parallel this is made for the 5th (of 24) Jeolgi Seasons especially this arrived on our table with a blast of sensory feel. Umami, soy touch was distinct on the nose but the complexity here is what will stay with us , soft acidic, fruity, plum, light malty feel. Impressive and worthy of the hype.
