First thing you notice is the clear rich garnet color. On the nose is chorizo and green pepper. Mouthfeel is high acid strong, coating tannins. Light body and medium finish. On the palate is game, earth/dirt, stoniness, and vanilla. Fruit is Dark cherries and umami raisins.

40% Carignan (60 years old!), 30% Syrah, 25% Grenache, 5% Mourvedre_ I've tasted this wine many times and always love it. The grapes come from the vineyard parcels in Berlou which boasts the highest elevation in St. Chinian AOC and the only schiste rich soil in the area (hence the cuvee's name).
Deep garnet in color with a periwinkle rim. The nose shows copious purple and blue notes in a strangely refreshing way, much like a cool breeze blowing through a sun drenched wild berry patch. With air, the nose deepens with Chambord-like richness and floral note that brings to mind perfectly ripe late summer peaches. All of this is framed by the subtle use of old french oak which imparts a delicate cedar edge.
The palate is a perfect example of a wine of balance and finesse. Fine dusty tannins are complimented by a taught line of acidity, reinforcing the high-toned nature of this wine's typically deep features. Here the berries turn liquid, the cordial qualities become crystallized, and the cedar framework vaporizes to sweet smoke.
