at first, seemed a little dilute in flavor on the palate, dominated just by dill aromas, gave it 20 minutes of air with just the cork removed and the wine emerged monolithic and concentrated, balanced acid and sweetness that was more textural than a flavor, the sugars here have integrated and still give body, but only give the barest impression of sweetness. wine is at peak now, no need to age further, fruit is golden and indistinct. dominated by the dill and caramel notes.

Deep gold color, radiant and pure. A tiny bit of dirty petrol leads the aroma with subtle and ripe apple and orange honey to complete the bouquet. Medium body, a touch oily, with medium sweetness and generous acidity. It didn't need a lot of open air time, but the more it got, the more complex it got. It was really best after a few days open and is still drinking like a baby, and at 21 years old it can go another 20, so it would seem. 5+10+18+9= 92

This was a real delight, especially the second night and at a warm enough temperature. Honey (but not too much), honeysuckle, ripe apple and a touch of tropical fruits with the petrol / diesel more pronounced (and enjoyable) on the second night. Great pairing with an assortment of cheeses. 7% abv.
