Fontanafredda Barolo Dinner (Del Posto, NYC): Another quiet nose. More strange metal sweat? Palate follows with the sweaty metal. Not too fun on opening. Pea aromas and mint arrive with air. It's entirely possible we just didn't have enough time for this to unfurl, because judging by vintage, it should have plenty left in the tank.

Clear, thin, brownish colour like expected from an old nebbiolo. Clean, mature nose. Aromas of dried fruits, dried cherry and wood. Missing fruitiness after opening but develops beautifully with time and air. Didn't decant it but I let the bottle stay open for 12 hours and tasted occasionally. Took the full 12 hours to finally open up and show its full potential.
Mouth is dry. A lot of acidity and tannins. I don't think the tannins will get any softer with aging. Tasteful and elegant. Might not get any better but will last for many years.
My bottle was one of the vertical set which was recorked and probably filtered because there was no sediment. Therefore it should last as long as the new cork.
