Long slow ox and a few into a decanter. Nice but not special. Nose is a bit muted and it’s just a bit off. Not flawed but not pristine. That’s wine every bottle is different.

Black pepper, stewed plums, aged leather on the nose. Dark dry fruit on the palate with a nice vinegary acid frame. A little stretched, but with age and wisdom. Excellent with cacio e pepe pizza from North.

Opened around 12:00 for dinner later. 5:00 Just had to try a small glass. Beautiful brownish crimson color that bricks out towards the edges. Great mellow nose of cherries nutmeg cinnamon. Maybe a hint of dirt or hay. In the mouth it is a nice soft expression of Brunello. Don’t mistake the soft for flabby. The power is there and gathering in the glass as it sits open. Great balance and enough acid and tannins to keep it lively. Wow. This will go well with our steak creamed spinach and asparagus. I’m glad I have a few more. I rate it later after dinner. Wow. An hour in the glass and it picking up more power. Even darker and more pronounced in the mouth. Gained some sweetness and heavier dose of cherries dark intense cherries and orange rind. Really good. Think that you just have to give wines a bit of time to fully open. It has been sleeping a while.

Getting a little old in the tooth - very soft, still nice acidity, but not enough to make up for the lack of tannins. Mellow, red cherry and plum fruit, very tasty with some leather and tobacco notes, just lacking a little zip now. Drink up. Its very tasty, but cannot but help thinking should have had this last bottle a few years ago.
Remainder of the bottle, one night later confirmed the initial take. Soft, getting a little stewed and overripe. Needs to be drunk up.
I'm going to go out on a limb and suggest that most of the 2007 vintage - an "excellent" (read "ripe") vintage of Brunello should probably be consumed on the earlier side. I've had much better luck (at least at the price points that I drink Brunello at) with less ripe "classic" vintages like 2006, which seem to be holding up much better.
