4+ years later: This has smoothed out, in the sense that the acid backbone is far less pronounced, but now a not altogether pleasant hint of bitterness presides. Blind, we might have guessed aged Northern Rhône. Quite drinkable, although not especially enjoyable, over five nights.

Relatively fresh at first for a Jura blanc (mostly chardonnay with some savignin, I think?), but by the third and fourth days the characteristic Apple, acid and slight nuttiness comes forward. Yet another lovely and distinctive wine.

Very floral for a Jura, but does have fruity, yeasty, and very lightly buttery notes in the background. Characteristically (as far as I know) for the region, it is very acidic. Slightly off-putting bitterness in the finish, but I believe it disappears in the second day of drinkin'. The wine also becomes a little milder and more yeasty with time.
