Tasted from the solera bota on the tour. Burnt hair at first, but with lots of air it slowly went away. Revealed a good bit of oily butter character, as well as lots of toasted grainy character. Very interesting to see it open up straight from the cask.

This bottle was stunning. Richer, more perfumed, but with the saltiness and fruit dialled up a notch. Ripe dried apricots balance with exotic spiced nuts. We had this with Spanish charcuterie and it almost felt like a liquid Jamon with a lift. Delicious.

This is a top Manzanilla. Yeasty and appley - baked apples. Iodine, salt and toasted almonds. Oak as well. Rich, deep, dry and just every so slightly bitter on the finish. Immensely sophisticated - a Manzanilla that's deeper and richer and more nuanced and delicious and serious than any I've tasted. Tremendous generosity and complexity. Superb.

The intensity is really dialled up here. Smoked salt, saffron, lemon oil, and a rich cashew nuttiness. Somehow both deep and fresh. Screams for a bit of Jamon Iberico. Great value.

Salty, iodine and savoury. Apple peel. Good concentration. Long fresh finish. Light body, very crisp.
