  • Bone dry, drinking well right now despite supposed 2012 end of range. Super tight bubbles, yeast and vanilla notes.

  • Not much more to add since last time. Still crisper than a fresh hundred dollar bill and the yeastiness just continues to grow. The lemon zest seems a tad more pronounced and the bubbles are still extremely tight. Very good cuvee.

  • Had with garlicy pasta. Bright golden color. Tight compact bubbles. Yeast nose with some roasted nuts coming through. Yeast and sour granny smith apple exploded on tongue and then a yeasty buttered toast dminated the palate. The garlic from teh pasta rebelled against the bubbles and there was soon a territorial war going on for my taste buds. Had to abandon the Iron Horse and go with another sparkling to finish the meal. Went back after dinner and really enjoyed all the flavors. As it warmed, grew more and more complex...more subdued. Extremenly dry. Brilliant bubbly but would definitely be careful what to pair it with. Seems like a big beef dish or something witrh a thick sauce would stand up to the beast and make it a beauty.
