A brilliant example of what may happen with time when good limestone terroir marries responsibly toasted oak. First a whiff of oyster shells, then comes the caramelized component suddenly creating intense roasted lobster-shell sensations. Really enjoyable balance in the mouth, with baked lemon and lemoncurd flavours, supported by subtle vanilla and spice, that linger for a good while with a strong sense of terroir. Excellent with local cod fried in browned butter, served with a white wine sauce.

A good balance of acidity, minerals and fruit ( apples and melons ). Lovely wine.
