Ungodly stuff, not really wine at all. This is an absolute freak of nature, and one that my buddy and I could not pass up when it was offered to us virtually at cost. This was bottled in 250ml bottles. 1% alcohol was all the poor yeast could muster after 5 years of fermentation. It poured out like maple syrup into our glasses and hit us with super-concentrated aromas of overripe pear with cinnamon, fermenting windfall apples, and butter. In the best kind of way, this is almost undrinkable. The acid is 12%, which meant as it warmed in our glasses, it became quite prominent, tart even.
Naturally, we poured some over my wife's homemade pound cake for a truly unique and delicious treat. We also poured a dollop into a bit of the Baumard Trie Speciale we had open, just to see whether it would blend (it did). But the minerality of the Trie Speciale was the predominant trait in the mix.
We're saving the last 100ml or so for a few weeks or months to see how it does with a bit more oxidation.
